Sweet Potato Cobbler

The Rev. Mildred Twitty, Pastor of St. Paul AME Zion Church, learned to make sweet potato cobbler from her mother in Polk County. She often makes this dessert for church dinners, where it is always popular. Some years her family and friends are lucky enough to get a gift of sweet potato cobbler for Christmas.

 

Ingredients (The Rev. Twitty adjusts quantities to the size of her baking pan)

Sweet potatoes
Butter
Sugar
Nutmeg
Vanilla
Pie crust

Peel and slice sweet potatoes as you would slice apples for apple pie, and then boil the sweet potatoes until tender. Place half of the potatoes in the bottom of a fairly deep baking pan. Dot the sweet potatoes with butter, and then add sugar, nutmeg and vanilla to taste. Place one layer of pie crust over the sweet potatoes, and then add another layer of sweet potatoes with more butter, sugar, nutmeg and vanilla. Top the pan with another layer of piecrust. Bake at 350 degrees until crust is golden and the sweet potatoes are well cooked.
